Mill Hollow Maple was awarded Blue Ribbons at the Otsego County Fair Maple Syrup competition in August. Yes, folks that is not one blue ribbon, but FOUR blue ribbons. One for each category they entered, Light Amber, Medium Amber, Dark Amber and Grade B Maple Syrup, taking top honors in all four divisions. The Medium Amber Maple Syrup was also given the distinction of Best in Show. In addition to Maple Syrup, Mill Hollow’s Granulated Maple Sugar was also awarded the 1st place Blue Ribbon for its category.

Mill Hollow Maple is owned and operated by Brian Ryther in New Lisbon, New York. With the help of his family, Brian produces one of nature’s most natural and unadulterated sweeteners. Brian has been making maple syrup in Otsego County since he was first able to taste the sweet sap of the maple tree.

In 2004 Brian made his first evaporator and processed the sap from 120 trees. Within two years Mill Hollow Maple was born and Brian purchased the commercial evaporator that is in use today. They currently tap 2,800 trees and use modern maple sap gathering and processing equipment.

In 2010 Brian incorporated Reverse Osmosis to aid in the reduction of the maple sap into maple syrup, which allowed them to reduce fuel consumption by 75%. In 2011 their application was accepted by the USDA’s REAP program to expand its Reverse Osmosis capabilities and further reduce fuel consumption and carbon emissions. With greater capacity to process maple sap, Mill Hollow Maple will expand into the 3-4,000 tree range – making it possible for this maple farm to continue to be self-sufficient.

Mill Hollow Maple is a member of the New York State Maple Producers Association and Brian Ryther is the current president of the Otsego County Maple Producers Association.

Mill Hollow is also a Certified Naturally Grown producer of maple syrup products. To be granted the CNG certification, farmers don’t use any synthetic herbicides, pesticides, fertilizers, antibiotics, hormones, or genetically modified organisms.

Mill Hollow Maple offers a full line maple products. From award winning Grade A Light, Medium, and Dark amber to Grade B Maple Syrup. We also produce maple candy, cream and sugar.
